George R. R. Martin-Inspired Rustic Tavern Stew

Ingredients

  • 1 lb beef stew meat, cubed
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup frozen peas
  • 1 tbsp tomato paste
  • 1 tsp dried thyme, salt, and pepper

Brown beef in a large pot, then add onion and garlic until softened. Stir in carrots, potatoes, tomato paste, and seasonings. Pour in broth, bring to a boil, then simmer about 45 minutes, until the meat and vegetables are tender. Stir in peas and cook a few minutes more. Serve with crusty bread while you enjoy a good story.
